Heavenly fruit cake

Sometimes you just feel like trying something new. This recipe is simple and can be used in many ways. This time I used frozen bilberries (blueberries) as the fruit option, but it’s certainly also very tasty with fresh apple slices or red currants.

Ingredients:

200 g butter, 200 g granulated sugar, 4 large eggs, 1 pinch of salt, 250 g plain flour, 2 tsp baking powder, 6 tbsp cocoa, 150 ml whipping cream, fruit for topping, cinnamon and vanilla sugar if you like.

Preparation:

Separate the eggs. Beat the egg whites with salt until stiff. Preheat the oven to 175 degrees Celsius. Cream the soft butter with granulated sugar and egg yolks until very frothy. Slowly pour in the whipped cream and continue beating for about 5 minutes. Mix the flour with baking powder and cocoa. Carefully fold the flour and beaten egg whites into the other mixture and spread onto a greased baking sheet (or baking paper). Distribute the desired fruit evenly over the dough and bake at 175 degrees Celsius for about 25 to 30 minutes. Once cooled, sprinkle with powdered sugar and enjoy.
