The kitchen fully under control

Time for a new recipe, right? Because I’m a fan of simple and quick cakes, here’s a recipe from my friend Annika. One day and a whole tray was eaten up!

Mother-in-law cake

For the shortcrust pastry:
150g flour
65g butter
65g sugar
1 whole egg
1 tsp baking powder

For the batter:
100g butter
200g sugar
3 whole eggs
175g ground nuts
50g flour
1.5 tsp baking powder

1 jar preserved cherries, preferably pitted (drain well)
Chocolate glaze

Preparation:
Put the shortcrust pastry into a springform pan, roll out smooth and prick several times with a fork. Distribute the well-drained cherries on top. Then spread the batter evenly over the cherries.

Convection: 150°C, bake for one hour

Let cool and cover with chocolate glaze.

And the best thing about the cake? It was baked in my new farm kitchen. The last few weeks there was real chaos here on the farm; boxes and buckets were standing around everywhere and craftsmen came and went daily. But now the kitchen is finished, almost completely put away and my beloved oven is already heated up.
