This time, there’s a recipe for everyone who enjoys homemade pastries with coffee or for breakfast. “Heavenly Rolls” – similar to croissants – truly delicious and easy to make.
I usually make these rolls while I’m cooking, as otherwise, the waiting and proofing times take too long for me. I immediately double the amount mentioned below and freeze the Kipferl lukewarm right after preparation. (Then they stay juicier inside when thawed).
Preparation:
60 g water, 1 packet dry yeast, ½ tsp sugar, 240 g warm milk, 100 g oil, 100 g sugar, 1 tsp salt, 520 g flour, melted butter.
Warm water, yeast, sugar, let stand for 10 min, add remaining ingredients and knead. Cover or use cling film and let rise for approx. 1.5 – 2 hours until doubled in size.
Place dough on a floured surface and divide into 2 equal parts. Form into balls and roll out round, do not press too hard, diameter 30 cm, brush with melted butter and cut into 12 pieces. Roll up each piece of dough from the wide side, if desired, place a dab of Nutella or firm jam in the middle beforehand. Place on a baking sheet – if made small, 3 rows of 8 pieces. Cover again with a towel for one hour. Preheat oven to 190 degrees top and bottom heat, bake for approx. 10-20 min. Brush with melted butter while still warm. Super tender rolls, even the next day.
It’s originally a recipe from the Thermo-Mix, but since it’s too small for our farm and I don’t have this wonder device, I make it with our kitchen machine and it still turns out “heavenly” good.
