On the farm there is a lot to do in summer: the garden, the harvest in the field, making jams and juices, weeding in the garden, producing goods for the farm shop, and keeping the farm in good shape.
One of my favorite places is and remains my farm kitchen. Especially in summer all sorts of delicious things can be found in the garden, in the fields, or on the mountain that can be wonderfully processed. So today there are three recipes for seasonal treats that can be prepared right now.
Currant Juice
1 liter currantsbring to a boil with 2 liters water
stir 1.5 kg sugar into the hot mixture
let cool and then stir in 50 g citric acid
after 24 hours bottle the juice
(for better preservation you can heat the juice again)
Currant-Rhubarb Cake
Ingredients:
200 g sugar
5 eggs
1/8 liter oil
1/8 liter milk
300 g wheat flour
1 pkg baking powder
150 g currants (mine were frozen)
150 g rhubarb (mine was fresh & cut into small cubes)
Preparation
First separate the eggs and beat the egg whites until stiff. Then beat the yolks and sugar until very foamy. Now let the oil flow in slowly.
Add wheat flour, baking powder, and milk and stir everything briefly once more. Finally fold in the stiffly beaten egg whites carefully.
Spread the mixture onto a baking sheet and finally distribute the currants and rhubarb on top.
Bake the cake at 180 degrees for 25 minutes.
Currant Foam Slice
For the dough
150 g powdered sugar
1 pkg vanilla sugar
3 yolks
50 g butter
3 tbsp water
250 g flour
1/2 pkg baking powder
1/16 l milk
For the topping
3 egg whites
200 g granulated sugar
1 pkg vanilla sugar
300 g currants
Preparation
beat vanilla sugar, yolks, sugar, and water until foamy
Gradually stir in the melted butter.
Add flour, baking powder, and milk.
Put the mixture on a baking sheet and bake at medium heat for about 5–10 min.

fold in currants
spread mixture onto the cake and finish baking at low heat until the foam turns lightly brown
