And here we go with the first cookies

Simply wonderful—this weather—crisp and cold, blue skies, and snow on the Gastein mountain peaks. In Sportgastein, the cross-country skiing season even opened today. I just love this time of year. Here is a view from our balcony today:

Even though it’s only November, it really makes you want to start baking cookies. One of my favorite recipes is for Linzer Kipferl. It’s important to take the butter and eggs out of the fridge the day before; it makes the dough much easier to pipe.
Double-piped cookies

makes approx. 30 pieces – depending on size. I always make double the amount

220 g soft butter, 80 g powdered sugar, 1 vanilla sugar, 1 pinch of salt, 1 large egg, 300 g wheat flour

Cream butter, sugar, and salt for at least 15 minutes, then stir in the egg, beat for 3 minutes on the highest setting, and then fold in the sifted wheat flour. Pipe onto a cold baking sheet with baking paper (e.g., round or elongated sticks) and bake briefly. That means baking at 180 to 190 degrees for about 15 minutes. Let cool and decorate with chocolate glaze or fill with jam, depending on your mood.
