Fluffy, light, and moist

… that’s the Topfen-Grießschmarren, a recipe from my sister-in-law. Our family loves this baked dish, served with homemade apple sauce or plum jam – simply delicious.

This recipe is great if you have fresh quark at home and enough eggs in the fridge.

Ingredients: (serves 4-6 as dessert)

* 150 g quark * 100 g sour cream or yogurt * zest of one lemon * 50 g semolina * 100 g sugar * 4 egg yolks * 1 whole egg * 4 egg whites * 10 g butter

Mix the quark, sour cream, lemon zest, sugar, and semolina and let it sit for about 20 minutes. In the meantime, separate the egg, and beat the egg whites until stiff. Then gradually add the egg yolks and the whole egg to the quark mixture and stir. Finally, fold in the egg whites.

Preheat the oven to 180 degrees. Put a little sugar and butter in a baking dish or pan, caramelize it, and then add the curd and semolina mixture. The

n bake in the preheated oven at 180 degrees for 25 minutes.

Remove from oven, sprinkle with sugar, and cut into pieces.

Enjoy and savor it. It also tastes delicious cold or reheated.
