A spring delicacy

At this time of year, things are really busy on all the farms! There is a lot to do, whether in, at, or around the house and stable. But during all the work, you mustn’t forget to put something “proper” to eat on the table. Our family really likes traditional farm-style home cooking like Polsterzipf (cushion corners) or also called Hasenöhrl (bunny ears). Literally “bunny ears”—but don’t worry—our animals still have all of theirs :-) The name comes from the appearance, because you can cut them out with a pastry wheel to look like a cushion or pointed like a corner or a bunny ear :-)

Recently our son brought home a great recipe and I had to try it right away—absolutely recommended.

I would like to share the recipe for these delicious “Hasenöhrl” with you:

Ingredients: (serves approx. 5 people—depending on hunger)
  • 300 g flour
  • 250 g curd cheese (Topfen)
  • 125 ml heavy cream (Schlagobers)
  • 1 egg
  • Salt
Preparation:
Mix all ingredients into a smooth dough (dough hook). Then continue kneading by hand. If the dough is too firm, add a little sour cream or yogurt so that the dough can be rolled out well.
Let the dough rest for about 1 hour, then roll it out thinly and cut out the Hasenöhrl with a pastry wheel. Deep-fry in good fat or clarified butter (it should be very hot). Turn over and then drain on paper towels, keep warm and eat immediately :-)

The finished Hasenöhrl can be served with powdered sugar with coffee or eaten as a main course with sauerkraut.
