From my mama’s recipe book
First of all, THANK YOU for the nice feedback: guests, locals, and strangers alike enjoy the reports of my farm stories, and the recipes from the farm kitchen are recreated especially often and with great pleasure.
Today I’m sending you a great recipe that we enjoyed making often in my childhood home at Maurachgut. The Fanta cake. I think as children it tasted even better to us because the word Fanta alone already had a positive effect. Perhaps it is nothing special for children nowadays, but for us it was and still is a “special” drink, which is only bought and drunk on birthdays or special occasions, as we drink almost exclusively homemade juices.

The cake is particularly moist and delicious – simply good with coffee on warm summer days. It is relatively quick to make and tastes especially good with peaches, raspberries, or bilberries (blueberries).
These measurements are intended for one baking tray.
Base: 4 eggs (separate yolks and whites), 250 g sugar, 1/8 l oil, 150 ml Fanta (or sparkling water or cola), 250 g wheat flour, 3 teaspoons baking powder.
Beat the egg whites until stiff and, in a second bowl, whisk the yolks with the sugar until frothy, then add the oil and Fanta spoonful by spoonful. When it is nice and frothy, slowly add the wheat flour and baking powder spoonful by spoonful. Pour onto a baking tray and bake at approx. 180 degrees for 25 min. Let it cool down.
Today we used blueberries as a topping – fresh from the alpine pasture. Here they are called “Schwarzbeeren” and are also particularly popular as a fruit. After the cake has cooled, cover the base with blueberries and prepare the topping.
Topping: 1 cup sour cream (Salzburger Land is best), 1 pack creme fraiche, 1 cup homemade yogurt or Salzburger Land yogurt, 2 packets vanilla sugar; if you like, you can add a little bit of normal fine granulated sugar. If you want, another packet of cream stiffener.
Cut 1 tin of peaches into small pieces or, as we did today, prepare blueberries and place them on the base of the finished baked dough. Then spread the cream over it and put it in the fridge; once it has set a little, you can sprinkle a bit of cinnamon on top. Enjoy your meal from Zittrauerhof in Gastein. www.gasteinurlaub.com
